Ingredients and Seasonings: Lots of plant-based ingredients, such as greens, beans, squashes, some of which are from organic farming. We use the finest and most natural seasonings that we can afford. Grapeseed oil, sunflower oil, olive oil and sesame oil are used sparingly in place of oil that contains trans fat. Sea salt, Bragg’s liquid amino, molasses sugar etc are used to replace highly processed and bleached seasoning such as refined salt and sugar.
My Vegetarian Way of Cooking: No deep-frying for sure. Steaming is preferred. Organic greens are usually blanched, and where possible, we incorporate salads into the dish to maximize nutrients from the food.
The Method: Where possible, we adopt energy saving methods in our cooking. Thermal pots and pressure cooker are used to cut down gas consumption while retaining the original sweetness of the ingredients. |
